Green Cardamom

The whole and ground form of whole, cleaned and dried fruits of Elettaria cardamomum . The products are green to light tan in colour and are highly flavored.

Cinnamon / Cassia

The whole and ground form of bark of evergreen trees of Cinnamomum cassia.The product is pale to dark brown in colour, with pleasant aromatic flavour.

Clove

The whole and ground form of whole, cleaned and dried flower buds of the tree in the family ,Myrtaceae Syzygium aromaticum. The clogrouped in terminal clusters. The flower buds initially have a pale hue, gradually turn green, then transition to a bright red when ready for harvest. Cloves are harvested at 1.5–2 cm (0.59–0.79 in) long, and consist of a long calyx that terminates in four spreading sepals and four unopened petals that form a small central ball.

Nutmeg

The whole and ground, cleaned and dried seeds of Myristica fragrans Houtt. The nutmeg tree is a large evergreen, it produces inside the two spices — mace and nutmeg. Nutmeg is the seed kernel fruit and mace is the lacy covering (aril) on the kernel. The nutmeg seed is encased in a mottled yellow, edible fruit, the approximate size and shape of a small peach. The fruit splits in half to reveal a net-like, bright red covering over the seed, the aril. Under the aril is a dark shiny nut-like pit, and inside that is the oval shaped seed which is the nutmeg. Nutmegs are usually sold without the mace or hard shell.

Mace

The Indian spice mace belongs to the Myristicaceae and its scientific name is Myristica Fragrans. Nutmeg & Mace are two distinctly different spices produced from a fruit of an evergreen tree which is usually 9-12 meter high. Mace is a dried outer ‘aril’ of the fruit firmly enveloping the kernel and nutmeg is the dried seed kernel of the fruit. It has a strong aromatic flavor and is a resinous spice that is warm in taste. Mace characteristically has a higher concentration of certain essential oils and features refined yet intense aroma than nutmeg and uses commonly in every Indian household. In Hindi mace is known as Javitri, Javinthri, Gayatri.Mace is originally grown from the nutmeg tree in Molucca Islands in Indonesia. The Portuguese controlled the Mace trade until they were driven out by the Dutch in 1602. In India, it grows in the Malabar region, Kerala.

Star Anise

Star Anise – Ilicium Verum – is a medium-sized native Evergreen tree of Northeast Vietnam and Southwest China. Star Anise is indigenous to South Eastern China. Commercial Production is limited to China and Vietnam. In India, it is Produced to a small extent in Arunachal Pradesh. This Spice is commonly called Star Anise, Star Aniseed, Chinese Star Anise or Badian. Star Anise is the unusual Fruit of a Small Oriental Tree. It is, as the name suggests, Star Shaped, Radiating between Five and Ten pointed Boat-Shaped sections, about Eight on average. These hard sections are Seed Pods

Black Cardamom
